Japanese salad – Aemono

Ae-mono means mixed(Ae) foodstuffs(Mono) in Japanese. This is a sort of Japanese salad using cooked vegetables such as spinach or Shiitake mushroom. I put my recipe of Aemono, as follows.

【Ingredient】
Wakame(salted seaweed) – You might find salted Wakame or dried Wakame at Japanese or Korean food shops.
Shimeji mushroom(or Shiitake mushroom)
Shungiku-Garland chrysanthemum(If not available, please use Spinach)
* You can add flakes of boiled chicken fillet or canned tuna. They go well with the dressing.

Soy-sauce Dressing for 2 persons】
Soy sauce 1TBS, Vinegar 1TBS, White sesame oil(If not available, use vegetable oils such as corn oil) 1TBS, Mirine 1TBS(You can use a third TBS of honey, if not available)

1)Cook the ingredients
Put Wakame(salted seaweed) into the water for 6 or 7 minutes to get rid of salt.
Boil it in hot water for 3 or 4 minutes. Drain the hot water and cool it down with water. Then cut into 2/3 inch.

At the same time, boil water in a pan and put Shimeji mushroom into it.
When it is cooked, take it out and cool it down.
Again, put Shungiku into the hot water. Drain and squeeze. Cut it into 1 inch.

2)Prepare soy-sauce dressing
Mix the sesame oil and vinegar well. Add Mirin and soy sauce. Mix them.
If Mirin is not available, substitute it with honey.

3)Put the cooked in 1) into a small bowl and mix them with soy-sauce dressing.
Done!
